Quinoa and beans a healthy alternative

Quinoa, black beans and cheese has protein and flavor.

Here’s a creation that’s healthy and simple. Filled with protein and flavor, it works as a snack or a meal. Trade rice for quinoa and greasy beef for beans, and see what happens. 

 
Serves 1  


Ingredients  


1 cup water

 
1/2 cup quinoa


1/2 cup black beans


1 tablespoon salsa


1 tablespoon Mexican blend cheese

 
Preparation 


Bring 1 cup of water to boil in a small pot


Add 1/2 cup of quinoa, cover and cook on low for 15 minutes


Turn off the heat and let the quinoa sit covered for an additional five minutes


Stir in 1/2 cup beans and 1 tablespoon salsa  


Top with 1 tablespoon cheese
