Roast cauliflower for a tasty snack

“Be cauliflower.”

A friend said that with a straight face over lunch after church one Sunday afternoon. She challenged me to think about all of the things cauliflower can take the form of — mashed potatoes, pizza crust, bread, to name a few.


If you take the time to mold it, cauliflower can be just about anything. While I can’t promise that 2019 will have the patience required transforming to a given situation, it can at least taste good. Right now, we’re trying a basic cauliflower approach. Roast it, and enjoy it as a snack.

Ingredients:

2 cups cauliflower florets

1 tablespoon olive oil

1 tablespoon blue cheese

Preparation:

Preheat oven to 400 degrees

Place cauliflower on a baking sheet

Drizzle olive oil over cauliflower

Bake for 30 minutes

Remove and top with blue cheese
