Looking for something a little different now that Thanksgiving has come and gone? Get a kick, literally, out of this lemon and honey chicken. It packs a punch, and is a good alternative to all of that holiday fare.
Ingredients:
1 1/2 pounds boneless, skinless chicken breasts
1 tablespoon butter
1 cup green beans
1/2 cup onion
1 cup cauliflower
1 cup broccoli
1 lemon
Salt
Pepper
Sauce:
1/2 cup freshly squeezed lemon juice
1 tablespoon lemon zest
3/4 cup chicken broth
1/4 cup honey
2 tablespoons corn starch
1/.4 teaspoon ground ginger
1/2 teaspoon crushed red pepper
1 tablespoon minced garlic
Preparation:
Preheat saucepan on medium with butter
Add inch-diced chicken and a dash of salt and pepper, stirring occasionally
Add minced onion, green beans, broccoli and cauliflower after cooking chicken for 4-5 minutes, stirring occasionally
Continue until chicken is completely cooked
Place in a large serving dish
In a separate bowl, whisk together garlic, red pepper, honey, cornstarch, ginger, chicken broth, lemon juice and lemon zest
Add sauce to pan
Cook for two-three minutes, occasionally stirring, until sauce thickens
Pour sauce over chicken and vegetables in the large serving bowl
Stir to combine, until sauce evenly covers everything in the bowl
Serve and enjoy!
