Gobble up turkey salad
Make the most of leftover holiday bird

Thanksgiving has arrived. Leftovers certainly make the list of things to be thankful for. Whether you have tons of turkey remaining, or just a little bit, a delicious turkey salad sandwich in the days after that spectacular feast is always a good idea. Enjoy, and happy Thanksgiving!


Ingredients:


4 cups turkey


1 inch-diced honey crisp apple


1/2 cup minced red onion


1 cup finely sliced celery


2 teaspoons lemon juice


2 tablespoons mayonnaise


2 slices multigrain bread per two tablespoons of turkey salad


Dash salt


Dash pepper


*Add an optional dash of Dijon mustard for a kick


Preparation:


Remove meat from turkey bones


Place 4 cups chopped meat into a large mixing bowl


Add apple, celery and onion to bowl


Stir to combine


Add mayonnaise, salt and pepper


Stir to combine


Add lemon juice


Stir to combine


Add turkey salad to bread


Top with additional slice of bread


Cut in half, triangles, squares – whatever fancy


Serve and enjoy
