There is something about the bagel. It just screams breakfast.
A really good bagel can create the perfect start to a day, regardless of whether it’s a lazy Saturday morning, or you’re dashing out the door on a Monday. While the bagel packs its own punch, the real kicker in this week’s recipe comes from clover sprouts. These little things offer fiber, calcium, iron, vitamin C and more. They provide a source of protein, but lack amino acids, so don’t rely on them as your only source of protein; merely a bonus to boost your day.
1 honey wheat bagel
1 tablespoon clover sprouts
Cut bagels in half vertically, and then in half horizontally
Pit, peel and slice avocado
Spread across bagel
Top with clover sprouts
