Kale and cilantro salad has anti-inflammatory properties, which contribute to a healthier heart.

It’s almost April, and there’s a good chance that any New Year’s resolution you had about eating better in 2018 have either faltered, or been pushed back to 2019. It’s never too late to get back on track.


Try this kale + cilantro salad for a bit of inspiration. It’s packed with anti-inflammatory properties found in both ingredients, which contribute to a healthier heart. Having trouble sleeping? Anxious about something? Cilantro can help. It’s one of the oldest natural remedies for anxiety and insomnia. Give it a shot, and let us know what you think.

Serves 1


Ingredients:

1 avocado

1 vine tomato

3 cups kale

2 teaspoons fresh cilantro

1 cup garbanzo beans

1 teaspoons lemon juice

Dash garlic powder

3 teaspoons olive oil

Preparation:


Place kale in a large serving bowl

Add inch-diced tomato (gutted), avocado and garbanzo beans

In a small mixing bowl, combine lemon juice, olive oil and garlic powder-vigorously stir to combine

Top salad with desired amount of dressing

Serve and enjoy.
