Mediterranean Couscous Salad |
No lettuce, no problem with this recipe |

Mediterranean Couscous Salad doesn't require lettuce. |
A salad doesn’t always need lettuce. Mix it up with our second couscous installment for February.
Serves 4
Ingredients:
1 cucumber
1 large vine tomato
1 can garbanzo beans
1/4 cup goat cheese
1/4 cup white onion
1 box of roasted garlic and olive oil couscous (roughly 5.8 ounces depending on the brand)
Preparation:
Couscous
Bring 11/4 cups water and 2 teaspoons butter to boil
Stir in couscous
Cover and remove from heat
Let stand for five minutes
Gently fluff with a fork
Gut and dice tomato
Add to a large mixing bowl
Mince onion
Add to bowl
Inch-dice cucumber (peeled or unpeeled, depending on your preference)
Add to bowl
Stir in couscous and garbanzo beans
Serve and top with goat cheese
Enjoy!
