Go creative with a kale creation
It's a worthy tool to boost immune system

Kale is a versatile addition to any meal.

Kale is a vegetable offering 260 percent of your daily Vitamin A intake in just 2 1/2 cups (a single serving), as well as 170 percent Vitamin C, 870 percent vitamin K, 10 percent Vitamin C, 10 percent Calcium and 8 percent iron.

Cold and flu season has arrived. Here are two recipes designed to boost your immune system, and keep you healthy through the holidays.


Ingredients:

1 cup red grapes

1/2 cup Gouda

5 cups kale

Preparation:


Place kale in a large bowl

Add sliced grapes and cheese to bowl

Toss and serve

*Option to add a vinaigrette of your choice

 

Ingredients:

5 cups kale

1/2 cup carrots

1/2 cup onion

1 teaspoon garlic

1 cup garbanzo beans

Coconut oil (enough to cover the bottom of the pan)

Preparation:

Preheat large pan on medium

Add minced onion and garlic

Add kale, shaved carrots and garbanzo beans

Stir occasionally

Cook on medium for 5-10 minutes

Serves 2
