Fall rice bowl welcomes autumn
Change seasons with tasty medley

Rice bowl medley can be prepared for extra protein or a vegetarian option.

Despite what the thermometer says, fall has arrived. Try this nutritious rice bowl to get you in the spirit of the season. We’ve included a protein-packed, as well as vegetarian option. Enjoy!


Ingredients:

4 cups kale

1 cup cherry tomatoes

2 sweet potatoes

2 teaspoons minced garlic

1 package basmati rice medley

2 1/2 tablespoons butter

2 cups water


Dash salt

Dash pepper

Man Cave Bring Home the Bacon Patty (optional)

Preparation:

For rice


Melt butter in large saucepan on medium

Brown rice medley

Add water and bring to a boil

Cover and reduce heat to low

Cook for 20 minutes

Let stand for five minutes

For vegetable medley

Melt butter on medium in a large saucepan

Add garlic

Add sliced tomatoes, kale and shaved sweet potato (potato skins are optional)

Add a dash of salt and pepper

Serve over a bed of rice

For protein, add two Man Cave beef, pork and bacon patties.

Crumble into small pieces and cook thoroughly with the vegetable medley.
