Table Charlotte- Recipes for the Week

Prepare for fall with rice bowl
Add sweet potato, garlic and onion to the mix

So long summer. Hello fall.

When my mom, Mary, died last month, I told my editor not to expect a lot of Table Charlotte recipes from me — I wasn’t sure how much I would be cooking during the next month or so. Then it hit me. Just because September looks like a sea of funerals—one is not enough—that doesn’t mean avoiding a space my mom loved so much would make it any easier. This recipe reminds me of her, and it sounds like something that would be waiting on the stove after I got home from soccer practice. So if there’s a kitchen in heaven, I hope she gets to try it, and I hope you do, too.


3 tablespoons butter

2 cups water

1 box rice orzo pilaf mix

1 cup cherry tomatoes

1/2 cup onion

1 tablespoon minced garlic

1 sweet potato

1 can garbanzo beans  

Dash salt and pepper



Melt 2 tablespoons of butter on medium heat in a pot

Add rice mix and stir until brown

Add water and seasoning packet

Bring to a bowl

Reduce heat to low

Cover and cook for approximately 20 minutes

In a separate pan, melt butter on medium

Add minced onion and garlic

Stir occasionally until brown

Add halved tomatoes, garbanzo beans and halved sweet potatoes

Add a dash of salt and pepper

Stir occasionally

Cook thoroughly

Once the rice is done, place in desired serving dish and top with contents from the second pan

Serve and enjoy!
