Greek chicken kebabs satisfy
Healthy and simple with flavor

Greek chicken kebabs with chicken breast, onion and quinoa.

After a hurricane rolls through, comfort food is a must.


Something simple. Something that says that the chaos has passed. Something healthy, but with a symphony of flavor. Try our Greek chicken kebabs to get you in better spirits. Add a side of quinoa to complete this meal.

Serves two

Ingredients:

1 pound chicken breast


1 onion (we used a white onion, but red or yellow will work as well)

2 tablespoons Greek marinade  

1 cup water

1/2 cup quinoa

Preparation:


Preheat oven to 350 degrees

Cover a baking sheet in foil

Chop onion into large chunks and place in large bowl

Chop chicken into large chunks and add to bowl

Cover both with marinade

Place a piece on onion a skewer, followed by a piece of chicken

Repeat until you run out of chicken and onion (approximately four large skewers)

Place on cookie sheet and bake for approximately 7 minutes per side (14 minutes total)

Bring 1 cup of water to boil in a small pot

Add 1/2 cup of quinoa, cover and cook on low for 15 minutes

Turn off the heat and let the quinoa sit covered for an additional five minutes

Serve over a bed of quinoa and enjoy.
