Rise and shine! With all of the hustle and bustle—and unwelcome stress—that tax season brings, it’s easy to forget to eat the most important meal of the day—breakfast.


Grabbing something unhealthy in a drive through can prove just as easy. Instead, we invite you try this delicious and simple spin on a breakfast classic—just brush your teeth really well before heading to the office.  Bon appétit!


Not So Scrambled Eggs
Ingredients:  


2 eggs


3 mushrooms Baby Portobello mushrooms


1 medium vine tomato  


1 tablespoon chives


2 tablespoons of butter

 
1/4 teaspoon fresh minced garlic  


Preparation:   


Dice mushrooms, tomato, and chives  


Crack eggs in a bowl and whisk vigorously  


Heat pan over medium heat, letting butter melt  


Add eggs and remaining ingredients  


With a wooden spoon, bring the eggs to the center of the pan until no liquid remains  


Serve with coffee or tea and enjoy!
